Christmas Eve





It was a bit different (and quiet) this year, since Kevin and his family were in New Jersey and Paul and his family went to Brazil. We had a rather scaled down Christmas eve. Never fear....we had fun! Instead of our usual gift exchange we decided to take the money we would have spent and adopt a family and provide a Christmas for them. It was an AMAZING experience. We still did the gift exchange, but exchanged home-made gifts and services. It was great to see what everyone came up with!

We also started a new tradition....the Christmas Eve headstand contest!

Happy Birthday Charlie!



I am obviously playing catch-up since the Holidays. Charlie's Birthday was December 23rd. My family and Charlie's family met at Red Robin to celebrate. He got some great gifts, and it was so nice to get both of the families together.

Dodgeball Playoffs








So...we didn't exactly get the gold medal this season, but we really improved from the season before. Now we are warmed up and ready for round 3. Go Thunder Express!

Delicious Dairy-Free Cupcake Recipe


Makes 12 Cupcakes

INGREDIENTS:
2 cups unbleached all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup pure maple syrup
2/3 cup soft silken tofu
1/2 cup natural smooth peanut butter
3 tablespoons dairy-free milk (soy-, rice-, almond-, or oat based)
1 teaspoons vanilla extract
1/2 cup dairy-free chocolate chips
Chocolate Frosting or Peanut Butter Frosting

DIRECTIONS:
Preheat oven to 350˚F. Mist 12 muffin cups with nonstick cooking oil spray and set aside.

Into a large bowl, sift together the flour, baking powder, and salt and set aside. In a blender, combine the maple syrup, tofu, peanut butter, dairy-free milk, and vanilla and process until smooth. Pour the liquid ingredients into the dry ingredients and stir until blended. Stir in the chocolate chips.

Transfer the batter into the prepared muffin cups and bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out fry. Remove from the oven, cool for 10 minutes, and release the cupcakes. Frost with Chocolate Frosting or Peanut Butter Frosting when completely cool.
